                What is Wagyu?

                Wagyu (Japanese cow) is a term that covers all Japanese cattle. There are several closely related varieties of cattle that fall within the Wagyu breed. The locally raised cattle of Swan Land and Cattle Co are the Japanese Black variety which produces extremely high quality meat.

                Wagyu Beef

                We are very exciting to be offering locally raised Wagyu beef. We are getting our beef from the local Black Swan ranch. Located in Wyoming and Iowa this is the beef of the highest quality. All our beef comes from the Wagyu and Wagyu-Angus cross cattle that are born in Wyoming and raised in Iowa. The cattle are fed a custom diet specially tailored to maximize the amazing tenderness, marbling and flavor that has made Wagyu beef famous around the world. Our custom feed ration has been developed from years of research and experience with actual Wagyu herds in the US and Japan.

                 

                We are firmly committed to the humane treatment of our animals which are handled with modern, low stress cattle management techniques and given free access to clean water, fresh air, quality forage and shelter. We strictly prohibit the use of electric prods, whips or anything else that will cause pain or harm to an animal.

                 

                Animal byproducts, hormones, or subtherapeutic hormones are never included in our cattle’s diet. Our customers can have confidence knowing that our beef is not only the highest quality but also free of unnecessary and harmful additives.


                Preparation of the Beef

                It is important to move quickly when cooking Wagyu beef. The unsaturated fat that give Wagyu its world- renowned marbling, flavor, and tenderness melt quickly. We recommend cooking most Wagyu cuts at a higher temperature but for less cooking time. When grilling, the use of a solid plate is suggested rather than placing it directly on the grate over an open flame to reduce the risk of melting the intramuscular fats that can reduce tenderness and flavor. It is also recommended to bring the beef to room temperature and using smaller cuts to promote even and rapid cooking.
